    Kerala

I am from the state of Kerala in India. The word Kerala means the land of coconut trees. But many other states are ahead of Kerala in coconut production.....Oh...... why bother?....let's quench our thirst now (you know one thing? tender coconut's juice can be directly administered in to the blood stream in the place of dextrose drip. Happy drinking

I love fresh coconut! Unfortunately, I don't get it nearly often enough. The word 'Ontario', literally translated means the land of eternal grayness, snow, and bitter cold. So fresh, ripe, tropical delicacies are often not near.

Thank you very much Isabel; for us coconut is an essential ingredient in our daily curries as its scrap/oil. It is used in various ways....

You and my neighbour Jack will go together well when she has her 4PM aperitif. Her world stops at 4PM no matter what the weather is....she will put her feet up with her vodka concoctions in her hands and do nothing.

Andrew the shot is that of soft or young coconut, not the hard ones...am I right, Nandakumar? I use the oil for cooking instead of olive oil. And also for the doggie dinner. I have not tasted curry for a long long time because my husband doesn't like coconut. He said he had enough of it when he was on loan as a pilot trainer for Saudia Air Lines.

It is soft, that's why I said I don't get enough of the fresh ones! Hard ones are available at the grocery stores quite readily.

As for curry - I'm a lucky man, the whole family likes it, including the kiddies, so it's a quite frequent treat in my house - the spicier, the better! In fact, I make my own - but I'd always be open to new recipes.... Hint, hint!

A very simple recipe; take the flesh of the tender-most coconut; don't eat this even if you are tempted ; add enough sugar; grind for just 30 seconds in a kitchen mixie; if it is pasty add small quantity of water while grinding; chill it and then drink it

Soft ones are available here every now and then and usually during the Thanksgiving and Christmas holidays. Incorporate it in your fruit salad and add milk...'makes a big difference in the taste.

Thanks, Nandakumar...I think I am going to cook a little bit of curry for me for dinner tonight. I will tell my husband you told me to do it. Or I will blame Andrew. Now I am hungry. I better cook rice right now, get that part over and done with. I love a lot of rice with my curry .

Snow and ice here (Stockholm), but in a few days I'll be where I can get fresh coconut from the palm (Santiago de Cuba). Your image brings memories.
