    Wow; the colours are so beautifully blended in the original, that it out beats the other two; second is black and white and first image is now third in my priority.

    I am hard put to choose a favorite, but I think it might be #1. Wonderful blend of tones and textures! I think #3 needs a wee bit of straightening, though.

    I prefer the B&W version here, with the sepia toned as #2.
    The coloured version does not work all that well as it looks like the saturation has been pushed too hard.

    Better - in my experience, boosting saturation will get you "likes" on social media from non-photographers. Experienced photographers generally go for more subtle approaches.

    I agree with Manfred's comment about saturation. I think the no-saturation version is much better. One can always add saturation or vibrance locally, if needed.

    Speaking personally, I virtually never add saturation globally. I've almost always found that it looks artificial when I do.

    However, I do often add a SMALL amount of vibrance, which is a more subtle change.
