I started off reading Brian Peterson's books. They are easy to read and quite practical. Not particularly geared to digital photography but really good if you want to try and get as much as possible right in camera.

In a different vein from the ones above, I like the "100 ways to take better [insert style] photographs" series.

They're usually not very technical, but the learning process they use is interesting. Basically it gives you 100 techniques or things to pay attention to while taking your preferred style of photography (regular, portrait, wildlife, landscape, b&w are available so far). The techniques/hints vary in complexity, but for the most part each one spans one page with examples (some spill onto a second page). So they are quick reads, easy to pick up and open to a random page and challenge yourself to try the technique listed, etc.
They're not overly technical, but I still really enjoy them.

Lighting, (since nobody's mentioned it), the go-to text on how light works is Light: Science and Magic.
For on-camera basic techniques, go for Neil van Niekerk's On Camera Flash Techniques for Digital Wedding and Portrait Photography he's brand-agnostic and uses both Canon and Nikon gear. Folks will probably also point you to Joe McNally's books, specifically The Hotshoe Diaries, but if you shoot Canon instead of Nikon, prepare to do a lot of mental translation when he goes into gear/CLS specifics. Speedliter's Handbook might be better for Canon shooters, but I haven't read it.

I like Bryan Petersen's books (and videos, youtube) and anything Scott Kelby writes. Joe McNally's "Hotshoe Diaries" is great too, if you are into off camera flash.
