I know my Canon Rebel EOS 300D is not a true 35 mm camera, so when I am looking at a photo on my PC exactly how much of it will be cropped on a 4 x 6 photo?

The sensor on your camera is 22.7 x 15.1 mm which is a ratio of 3:2. Your photo at 6 x 4 is also 3:2 ratio so will not be cropped at all. However your viewfinder covers only 95% of the image, so you will have a slightly larger view than you expect, when you download it.
