What was the challenge, the wind, the sloping land? Very nice images, a bit dark in the third image but it adds to the mystery of the scene.

Nice photos. Do you recall the greenery of the first photo being so dark? I wonder if a graduated ND filter would have produced a result closer to what your eye saw.
I really like the photo of the cow. I couldn't resist increasing its saturation and bringing out a bit of blue in the sky. Here it is below. Perhaps it's overdone; I have two different monitors and one shows it more saturated than the other.

My favorite is the cattle on the sloping pasture (#2).
I suspect a bit of work in post processing will allow you to bring up some of the colours and tones in the darker areas on the remainder. The sky is actually an bonus, to my eye, as it gives some extra element to the images (especially #1).
Seems to me the only challenging part of any photo shoot in this area would be having to go back home or stop to eat.
