It probably depends on the context in which we're shooting; if I under-expose a landscape by 3 stops I just reshoot it; for trickier exposures I'll combine multiple shots 32x 3200 ISO shots looks like ISO 100 to 200 (or use a few flashes).

I've heard others mention the combo exposure approach to noise reduction (as opposed to HDR); I haven't tried it myself.

BZChi7d, now THERE'S a great example of something you can't do natively in an image editor!
I like Topaz Adjust and Portrait Professional.
Either of the above can be over used but when used with a light touch, they are a quick way to enhance or just plain change an image.
