    The camera does it easily -- it's just that we don't have the same dynamic range available to us in our monitors and in prints.

    The "Trick" is to simply expose for the highlights and then compress the dynamic range of the scene using the fill light control in post-processing

    More or less said it all. I also tweak the curves a bit. A lot of the PP controls do just about the same thing and which I decide to use often depends on what other changes I want to make. If it gets very tricky (or I am being very fussy) I will use an adjustment layer with masks.
