For me, in the first one I think the composition requires that you get all of the vertical face in focus and not worry about whether anything else is in focus. Similarly, in the second one, I think you need to get all of the near vertical face in focus.

#3 is nice and sharp but it will be nice if you can reshoot #1. that is a nicer comp.
I like the last one Jon,because #1 and #2 were too shiny ..the light is much better in the last one.I also agree with Isabel that you shoul reshoot #1 with better light conditions because the composition is good.
I definitely prefer the compositions in the first two images. If you're not using a white balance card for these, you should be. Doing so will solve all of your white balance issues.
Nice try, the 1st is ok, second much better though needs more (a tad) DOF, the last shows too much of plate and surround get closer.
