    Thank you Frank.Matteuccia Struthiopteris or more commonly referred to as the ostrich fern, the fiddle head is the fern first appearence and has been know to grow 6 inches overnight.

    They are also considered to be quite good to eat when they are fresh in the Spring.

    LOL! My mother-in-law is French, grew up in Maine close to the Quebec border, and she loved Fiddleheads! Not so easy to get where we live now and I don't think that my wife took quite the shine to them that her Mom did. So, no, I'm afraid I don't have a recipe but I do remember her speaking fondly of them.
