I prefer your second image. The first has got a great composition but doesn't say 'York' to me, I don't quite know why, but I think some of it is the red houses - they are too red. The colour in the second is more true. But of course this comes from a Brit who is used to grey skies.................
15 images, how did you do it?

Why: The lens I had with me was not going to enable me to capture the entire scene in one shot (24mm was not wide enough for the location I was in, and backing up was not an option).
How: I found the viewpoint I wanted, and started shooting in a grid pattern making sure I had an overlap of ~25-33% of the previous frame. I then brought all the images into Photoshop and merged them together (the Photoshop algorithm is pretty good at this). Processed out the image and them made the final cropping decision.
Shooting hand held can cause issues with the merging if you are not careful and limit the amount of movement of the camera as you shoot the frames (using a tripod with the nodal point set for the camera/lens/local length is best - I did not have a tripod available). Having a computer with sufficient memory and processing power is also helpful.
