However, he then contradicts that statement immediately to the right in a sidebar that lists the essential steps that must be taken. One of them is to set the hue adjustments. It's not possible to set the hue adjustments if your first step is to convert to monochrome and if your workflow never reverts to the color version.
By the way, he also devotes two pages to the workflow of using SEP. At the time, it was the first version, not the current version. He literally explains the workflow recommended by the developer and doesn't explain whether he likes or dislikes anything in that workflow.
