Matt - can I suggest another street photography technique I have sometimes used quite effectively. I call it "hiding in plane site".
I'll get to a location and find a place to sit or stand and will start taking pictures. I do move around a bit, but within a fairly constrained area (I might move around 10 to 20m / 30 - 60ft). I'll usually stick around for the better part of an hour. I find after a while, people don't even notice I am there (and when I use the D800 with battery holder and the 70-200mm lens, I'm not all that hard to spot). One of these days I'm going to try a shorter lens, but I tend to focus more on shooting the people more so than much of the background.
