Brian - when you are shooting eyes, try to ensure that you are getting decent catchlights (i.e. reflections) in them. Without them, eyes tend to look rather dull (which is what you have in this shot). You really want a bit of a spark or twinkle in the eyes of both people and animals.

In studio work, photographers place lights with light modifiers (primarily softboxes) in a positions that result in this effect. Have a look at professionally done head shots on the web to get a look at what I am writing about.
