My camera (sonyA7 M2) has options to ....
1. Select crop sensor
2. Auto select crop sensor
Why would someone select these options on a full frame camera?

If you are using a crop sensor lens you'll sometimes prefer to crop in-camera rather then crop in post-process to remove the vignette.
Generally if you have crop sensor lenses from a crop sensor body and want to use them with a full-frame camera.
I agree it's one of many useless functions found on modern cameras.
Thankfully, Sony is marching on with their lenses. There are now some very serious full frame lenses available for the A7 series (for serious money).
Yes and with my FF Nikon in crop mode, there is a framing guide in the optical viewfinder which allows you to frame the shot properly. This means that it's just like using a crop camera. I don't know about the Sony but it could well do something similar in it's electronic viewfinder.
