I prefer the second version. Too much out of focus barn area in the first which I find distracting. Even against a plain sky I suspect those out of focus ears would have caused a problem.
I think there is more 'breathing space' in the second image. The first does feel a bit claustrophobic, with everything crowded in on the viewer. Given that it is so, it is a good image in that it creates a mooed and atmosphere of, to me, menace. The barn becomes sinister in the first image.
I love how the B & W conversion emphasises the texture of the wheat. That, in both images, is wonderful.
The second for me, too, especially for the dof.
It also shows how the sometimes denigrated rule of thirds does work.

These are so different from your typical style that that factor alone must have been especially challenging. Good for you for getting out of your comfort zone (something I'm so often unwilling to do).
The style in the first one I think requires a greater depth of field that allows all the little tiny parts of the wheat to be very sharp, especially the bright parts against the darker background provided by the barn.
Removed the ears ( as a veterinarian, I am not allowed to do ear cropping banned in Canada, so I cloned them out) and went with an larger version so the barn is not as large Tried to lighten the barn but was not happy with the effect as the shot as taken in the late evening and there was too much noise if overprocessed
That edit of the first image looks a lot better to me.
The negative space added to the second version of the first photo does the trick for me insofar as that aspect of the composition is concerned.
