Recently I set my D7200 to use back button focus. My question is when I depress the AE-L/AF-L button to focus does the camera set exposure at this time or does it set exposure when I depress the shutter button?

Use the bbf in a light area, move the camera to a dark area, take the shot and you know.

The important issue is that you can configure back-button auto focusing to handle exposure how you prefer. In my manual for the D7000, all of the configurations are explained in the explanation of "f5: Assign AE-L/AF-L Button." I didn't take the time to download the manual for your camera but I'm confident the same information is there for you to review.
