India is such a huge and diverse country, with 200+ recognized, official languages that the same (or similar) foods can have vastly different names in different places. Some foods look quite similar from the outside, but are made of totally different ingredients.
Well captured and I do like the light differentiation. Maybe a little more color on the subject , but did you taste what he was cooking ?I remember days in Israel while in the summer as a high school kid , I worked construction down south and many a times we cooked in a similar fashion , dam , it tasted so good.
It's hard to put more colour in when it is not there in the first place. This shop and his clothing were relatively faded and sun-bleached. A lot of places had brilliant colours, but that was not the case everywhere.
I had lots of street food in India, but not at this particular place.

I love Indian food and a lot of the food served in U.S. located Indian theme restaurants is modeled after the Indian street food. However, hopefully it is kept and cooked in somewhat more sanitary conditions.
