    Cooking chapatis

One of the women who saw us walking around with cameras invited us into the courtyard in front of the where another woman was cooking chapatis. They are first cooked using a skillet (tawa) and are then browned by holding it over an open flame briefly.

One can see the hand grinding wheel in the background where the flour is ground and in the foreground there is a warmer where the finished chaptis are kept warm until they are eaten.

Except that they use a form of whole wheat flour rather than ground corn, so the taste is quite different.

There are flour tortillas which are somewhat akin to Chapatis...

I have not found an Indian dish that I did not enjoy. If I had to be a vegetarian, I could do quit well with Indian vegetable dishes...
