The noodles tasted good also! I was very impressed with the tour we took to China a few years ago. Hotels were very nice. Meals were excellent: breakfast lunch and dinner (except for 2-days in Hong Kong when it was only breakfast). Transportation; bus, hydrofoil and airplane(as well as Maglev in Shanghai) furnished as well as all entrance fees and extra expenses. We had a general China guide who was with us the entire trip (with the exception of Hong Kong) and a specific city guide for each location. We had a very good time but returned home pretty well exhausted.
Generally, we'd get up early in the morning pack and put our luggage outside the hotel door. Then it was breakfast and sightseeing all day long. Then we would fly to the next city, eat a late supper and turn in. Our luggage would be waiting for us in the new hotel room. In the morning we would start all over again... That was 14 days, twelve in China and two traveling back and forth from San Francisco. The cost was $1,500 USD each, including the round trip air from the states...
Our favorite restaurant was in Xi'an that served all kinds of Chinese dumplings and had an excellent floor show to entertain us...

Richard, the last detail that you describe seems to be like being in a Yum Cha restaurant. When we visit Melbourne I always take Bill to Chinatown to eat Yum Cha. Like the colourful entertainers.
Now I want noodles! I had no idea that is how they are made fresh. All the shots are very nice.
