I think your processing technique distracts too much from the details; of the three I like the second shot best. Nice effort on the compositions.

I'm the odd one out. I like #3 the best. The problem with #2, IMHO, is insufficient DOF and a misplaced point of focus. Narrow DOF makes sense if you want to highlight one particular area, but not otherwise. In this case, what appears to be in focus is the bottom right segment of the steering wheel and part of the right border of the dash, neither of which is an interesting part of the photo. The interesting details are all blurred to varying degrees.
Seems to me that one option would be to keep the entire steering wheel in focus, if that is what you want people to pay attention to. Another would be to keep the steering wheel and near end of the dash (where the gauges are) in focus.
In contrast, in #3, the OOF headlight helps focus attention on the hood ornaments.

I agree with Dan, a larger or shifted depth of field could help #1 and #2.
#1: Strong leading lines. The grill and the Singer logo draws the eyes up to the 9 but then the 9 is out of focus.
#2: Cars are all about their lines and their curves. My eyes want to follow the curve of the dash, but as with #1 that leads me to the out of focus part of the shot.
#3: Great use of depth of field. There is enough context to get the character of the car but the balance and focus pulls my eyes to the emblem and hood ornament.

+1 to the above comments. The DoF works against the image in the first 2, but is what makes the third. I'd add, as one who rebuilt an MG TD many years ago, there is not much in the second one that says "Singer", unlike in the first and third.
